Tuna is a pelagic marine fish belonging to the Thunnini nation, composed of several species from the skombride family, especially the Thunnus genus. This fish is a reliable swimmer (once measured at 77 km / h). Unlike most fish that have white meat, tuna is pink to deep red. This is because the tuna muscle contains more myoglobin than other fish. Some of the larger species of tuna, such as Atlantic bluefin tuna (Thunnus thynnus), can raise their blood temperature above the water temperature with their muscle activity. This causes them to live in colder water and can survive in diverse conditions. Most large bodied, tuna is a fish that has high commercial value.
