Because of the heat, almost all apples are ripe early. 2018 proved very fruitful.
Grapes are not yet mature enough for wine, there is time to make the apple cider.

even if it molds on top you can scrape that off, as long as it smells active and bubblie can be normal. I make apple cider vinegar with apple cores, peels you name it, I just made some pear cider vinegar, super good for salads, same process basically any fruit with sugars will ferment into an alcohol or vinegar depending on recipe! :)

I do like to keep in frige.. however, if it's colder temps say in Winter you can leave in cupboard.
