Don't throw out your products with aspartame. While IARC has labeled aspartame as possibly carcinogenic, the WHO's risk committee JECFA has not changed its prior risk assessment. Aspartame is safe up to 40 milligrams per kilogram of body weight, which is like having 15 cans of diet coke per day for a 150 pound person.

Again keep in mind here IARC doesn't account for exposure and risk, it is just potential to cause harm. This is mostly a classification for future research purposes, rather than for safety purposes. It is based on limited evidence for cancer in humans (specifically, for hepatocellular carcinoma). There was also limited evidence for cancer in experimental animals and limited evidence related to the possible mechanisms for causing cancer.

"“JECFA also considered the evidence on cancer risk, in animal and human studies, and concluded that the evidence of an association between aspartame consumption and cancer in humans is not convincing,” said Dr Moez Sanaa, WHO’s Head of the Standards and Scientific Advice on Food and Nutrition Unit"
