Always control the heat. The trick to whipping up a good dish is always dependent on the heat.
After cooking your broccoli in hot water for few minutes, soak immediately in cold water to retain its green colour and crunchiness until you are ready to use the cooked broccoli for your cooking.
Always half cook your spaghetti before you drain the salted water. By the time you use your half cooked spaghetti in making pasta, the spaghetti will not be overcooked.
When using cucumbers in making a dish such as raita (its an Indian dish), always dice the cucumbers and sprinkle some salt over the diced pieces. Leave it aside for few minutes. You would have noticed osmosis taking place. Drain the excess water before you make your cucumber dish.
When you defrost your seafood, chicken or mutton, do not place them in a bowl of water and leave them aside. Make sure they are under running water (a thin stream of water is also fine) so that there will not be any chance for bacterial contamination.
Always wash your steel pots and pans immediately after cooking. Yes, you heard me right. The stains are best removed easily when the pot and pan are still hot. You can wash them under running water immediately after cooking.
When cooking mixed vegetables, add the vegetables that take longer time to cook first. For instance, potatoes take longer time to cook than carrot.
