Buckwheat and apple muffins

I made these a few weeks ago and I am so angry at myself I didn't write down the recipe! I just mixed the ingredients on the go and didn't measure anything. They turned out great, so I will be trying again during the holidays.

Does it ever happen to you too? You create something wonderful and never manage to repeat it. Oh well... a lesson for next time.
