Everytime I make this pie is a hit and its quite simple to make!
Ingredients:
- 1 package of graham cookies
- 90 grs of unsalted butter
- 4 eggs
- 1 can of condensed milk
- 3/4 cup of lime juice
- 1/2 cup of white sugar
Instructions for crust:
- Pre-heat oven at 350° F
- Crush graham cookies
- Melt butter
- Mix with a fork and flatten out in the pie tray
- Place in oven for 10 mins
- Let it cool completely for 25 mins
Instructions for pie mix:
- Pre-heat oven at 350° F
- Take 4 yolks and place in glass bowl
- Add can of condensed milk and whisk
- Add lime juice and whisk thoroughly
- Pour on top of pie crust
- Place in oven for 10 minutes
- Let it cool completely for at least 35 mins
Instructions for merengue:
- Place 4 egg whites in glass bowl
- Add white sugar
- Beat until merengue is fluffy
- Use a plastic utensil and place evely on top of pie
- Place oven in broil at 400° F
- Let pie for 3-4 mins but watch it closely as it can easily get burned, you want to light brown the merengue
- Let it cool completely and placr on fridge for at least an hr before serving
