Coffee cherries don't all ripen at the same time, whether on the same continent, in the same country, or even on the same shrub. This makes logistics for getting ripe cherry directly to flotation, pulping, fermentation, and drying even more complicated. What happens if it rains for 5 days when you're trying to dry your coffee in open air? How about if it is incredibly hot and dry, and your coffee dries too fast? Coffee is delicious part of nature, and nature is a thing of beauty, but don't let good agricultural processes fool you: nature is always ready to show you who's boss!

Harvest is very late this year in Ethiopia. We recently visited farms throughout the Gedeo Zone, where each reported a very late harvest season. Volumes are looking good, but ripening is certainly later than usual this year. Keep this in mind when stocking up for your Ethiopian coffees this year! Arrivals may be a bit later than usual as well.
