I travel the world Part 3: Berlin a visit to Chef Ducs new Restaurant 893 Ryotei

If you wonder what Number 893 means -> 8 9 3 in Japanese it reads YA-KU-ZA (Japanese Mafia)
Its the worst combination of cards you can get in an traditional Japanese card game!

If you walk by, the place looks like a total dump. The windows are dirty, someone sprayed something onto the windows (you would never expect berlins best new japanese restaurant here)


Chef Duc is the Owner of several Restaurants in Germany, Kuchi Berlin, Moriki Frankfurt, a new Pho Place in Berlin and the Brand new 893 Roytei


Once you enter, you see the bar and if you go further, there is the huge open kitchen.





Starter
Aburi Salmon with Truffle & Salmon Avocado Tortilla & Pimientos




Sushi
Uni (See-Urchin) & Unagi (Eel) & Chuo Toro (Fatty tuna)



Main Course
Kinmedai (Golden Eye Snapper) with white miso


Dessert
Homemade Matcha Mascarpone Icream & Yuzo tangerine Sorbet

The food was spectacular, it was prepared and within 20 Seconds it will be on your table. So the quality and the freshness is incredible.

The Starters were just perfect, the salmon was not too fatty, but had a very good taste and the yuzu sauce was amazing.

The Sushi The toro was almost perfect, 9/10 points, the uni was 7/10 and the Ungai was 9/10.
(Reason for the Uni being only 7/10 is, that you cant get japanese grade uni anywhere in the world, execpt in japan, and only japanese Kuromaguro will ever score a 10/10, but for european standards, that quality today deserves a Michelin Guide recommondation and i am sure it wont take them longer than a year)

The Fish That one was a 10/10. The fish has been importet from Tsukiji Market and arrived today. It was prepared to perfection, the right amount of salt and a perfect balance with the white miso sauce. It wont get any better and the 893 is one maybe 2 restaurants in Germany serving Kinmedai.

The Dessert 8/10 for the Matcha Mascarpone Icecream and 10/10 for the Yuzu tangerine sorbet.
The Yuzu tangerine is stunning, not too sweet, the hint of yuzu provided the perfect balance.
