With crypto's you have different kind of middleman. You can have business running on blockchain with low fees/no outside interference. But at the end of the day, you need some FIAT to pay for expences (staff, rent, car, technology ...)

But that's not a problem. If you make 1000 transactions inside Blockchain environment and 1 last to FIAT, you are still doing better than those paying for 1000 transactions in FIAT.
