When changing some of my meals, trying to get rid of animal products, an important step was finding something new that tastes at least as good as the thing I was replacing.
I loved eating muesli but I usually used some sort of milk-product (milk + yoghurt or buttermilk) to get the creamy texture I loved so much. Usually some sort of fresh fruit would go along into the bowl for a sweet and fruity taste.
While looking for alternatives I came across "porridge" / "oatmeal" which isn't that common where I am from.
I really fell in love with it: it's super easy to make, healthy and you can experiment with it in so many ways that it never gets boring eating it.
Getting a water boiler really help since all you have to do is heat the water in the boiler, put some oats in a bowl and pour the water over them. Cut some fresh fruits while waiting for the oats the soak up all the water. Add the pieces to the bowl, mix and enjoy.
If you want it chocolaty just mix a heaped teaspoonful of cocoa powder under the dry oats before pouring the water over.
You can use all kinds of fruits to sweeten it up: dried, fresh, local, exotic, frozen, etc. .. feel free to create your own.
Adding all sorts of nuts and seeds and a pinch of cinnamon on top helps to refine the taste.
If you try it out let me know which version you made and if you liked it.
