Ingredients
300 g sugar
3 eggs
300 ml sunflower oil
300 g flour
300 g grated carrots
100 g chopped walnuts
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon powder
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon vanilla extract
PREPARATION
Beat the sugar, eggs and oil until all the ingredients are well blended, add little by little the flour, baking soda, cinnamon, ginger, salt and vanilla extract, continue beating until everything is well blended.
To this preparation add the grated carrots and chopped walnuts and mix manually with a wooden spoon until everything is well distributed.
Distribute this mixture in three sponge cake molds of greaseproof paper, bake for about 20-25 minutes, or until it comes out clean when pricked. Let cool and remove from the molds.
