While lettuce is often the base for many a salad, it’s easy to branch out to other vegetables for leafy inspiration. Kale is an excellent salad green, and is wonderful option if you like to make salads ahead of time (put those Mason jars to work!). Pair it with avocado for a salad that needs minimal ingredients for big flavor.
Salads don’t need leafy greens at all — skip them in favor of crunchier vegetables like celery, radishes, or the often-neglected kohlrabi. Broccoli and carrots are also go-to salad ingredients, and crunchy jicama livens up just about any healthy salad.
Add grains, legumes or lentils to salads to bulk them up and add protein, or go for roasted fruits to add a touch of sweetness. Don’t forget that fresh herbs can play a big role in salads, from homemade dressings to simply adding chopped herbs on top. They’ll pack a flavor punch and keep you coming back for more.
