Pinky Cole, the restaurateur behind Slutty Vegan, a plant-based burger chain, has a lot on her plate.
Two months after opening her first New York City location in Brooklyn, Cole’s first cookbook arrives Tuesday, and she’s also set to open an additional Slutty Vegan shop in Manhattan.

The 34-year-old Atlanta-based entrepreneur said the title of the cookbook—"Eat Plants, Btch: 91 Vegan Recipes That Will Blow Your Meat-Loving Mind"—is intentionally provocative.

"I wanted it to be in your face; I wanted to smack you so hard that you couldn't help but pick it up and buy it," Cole told the Daily News.

"And we live in a world where you've got to be so raw and real with people because just doing it soft and pretty doesn’t work anymore," she added. "You've got to make some noise, and I wanted to make some noise." And that’s exactly what I did."
The cookbook includes recipes for dishes like avocado egg rolls, backyard quesadillas, and black pea burgers.

Cole recruited fellow influencers, entrepreneurs, and vegan chefs to share their favorite recipes for the book. Contributors include New Jersey-raised Chef Quan; Chef Nikki in the Mix, known for vegan pancakes; and chef Luis Martinez of My Abuelas Food in Atlanta.
"It was very important to include them because I’m the type of person that will always lift as I climb," Cole explained. "It’s not enough for me to get it on my own."
Cole is embarking on a live tour to promote "Eat Plants, Btch!"
"It’s going to be a vibe," she said of the five-city tour that kicked off Monday at the Gramercy Theatre in Manhattan.

Produced by Live Nation, the events will continue on to Atlanta on Saturday and Los Angeles, Dallas, and Baltimore on later dates. The goal is to elevate the traditional concept of a book tour.
"I’m doing everything for this." "I got performances, DJ Trauma, and black-owned businesses that are coming in to promote their stuff," Cole said. "I’ll talk about the book, entrepreneurship, and sharing my story."

Radio personality Angela Yee, who co-owns a coffee shop in Brooklyn, will moderate the events, which will feature food trucks serving dishes from Cole’s cookbook.

In September, Cole opened her first New York location of Slutty Vegan on Brooklyn’s Fulton St., at the corner of South Portland Ave. Celebrities like Spike Lee and hip-hop legend Doug E. Fresh were among the early patrons.
And by the end of this month, Cole plans to open another Big Apple-based location of the chain that’s mostly based in Atlanta and other Georgia areas. The new spot will be in Harlem, at West 135th St. and Frederick Douglass Blvd.

"New York is a whole other breed," said Cole, who started Slutty Vegan in 2018. "I love whatever way New York is. It’s so different from the other locations.
"What I like about this location is that you get everybody—yyou get white people, black people, Asians, everybody from everywhere, that just pass through." So I get to reintroduce the brand to people every single day. "And that is cool."
