Quick And Simple Breakfasts

As a mom of four, I've learned to whip some nutritious and satisfying breakfasts through recent years.  Here are a Few of the favorites in my home:

  1. Breakfast Tacos-Purchase some inexpensive can I freeze corn tortillas, split two eggs per individual into a bowl, then add about cup of water into the beans, add shredded cheese, blend, and cook into greased or skillet over medium high heat, stirring frequently.  If the eggs have just about lost all of their liquid caliber, switch off the heat and allow them to finish cooking.  Transfer eggs into a serving dish whenever the liquid is gone.  (Don't cook eggs-they become rubbery.)  Warm the tortillas briefly in the microwave, pan (I normally use a skillet with a little butter inside) spread a bit of butter on them, meet about cup of egg whites.  If you've (or enjoy) some of these you can add them into the tortilla: spicy sauce, avocado/guacamole, sausage, bacon, leftover meat.  Roll the tortilla up and consume.  
  1. Pancakes-Don't purchase pancake mix!  They're charging a ridiculous price for bread, salt, sugar and baking powder.  Here is a simple recipe: combine 1 spoonful 1, 1 T. baking powder, 1 egg, 1 t. salt, 1 c. milk plus 1/4 c. oil until lumps are gone.  Heat a skillet over medium high heat, grease with a little butter, pour batter to create three pancakes (approximately 1/4 noodle batter for each).  If the bubbles burst and keep open, check the bottom to find out whether it's brown.  If that's the case, flip and put a little lemon on each pancake.  After the butter is melted remove and set on a plate.  Serve with sausage or bacon.
  1. Muffins-We do a great deal of muffins: oatmeal/walnut, poppy seed, apple, peanut butter, etc.  Making your sandwiches is simple and they take approximately 22 minutes to cook in 400F.  Planning time is about 10 minutes.  Since they require somewhat longer, I aim on the children eating them.  I create 1-1/2 recipes we'll have extras to talk with educators or consume afterwards.  Makes the day ride home a briefer when the children have a snack after school.  Here's the recipe for 10 muffins: 1-3/4 c. flour, c. sugar, 2-1/2 t. baking powder, t. salt, 1 egg, coriander milk, olive oil.  Occasionally I include c. drained crushed canned pineapple with roughly 1/3 c. coconut, or nuts and raisins, or poppy seeds and lemon, or cranberries or dates together with nuts.  Get creative!  For peanut butter noodles include c. peanut butter 2 T. butter, 1 egg and then c. more milk.  Fill the cakes to 2/3 complete.  Use muffin liners or grease the tins really well.  Cook for 22 minutes or until brown on top.  Serve hot with butter.
  1. Biscuits-These are excellent since they simply require 12 minutes.  I typically cook an egg until business and at times sausage or cheese or bacon to go on the egg and create a biscuit sandwich.  Better than any push!  Here is the recipe: 2 tablespoons flour, 1 T. baking powder, t. salt, 1/3 c. shortening, c. milk.  Mix and cut in shortening with fork or pastry blender until it resembles cornmeal.  Add milk and stir to function to a chunk.  Place onto floured surface and pat down to approximately depth.  Use a floured inverted jar or glass to decrease circles.  Place cookie sheet and cook at 450F for 12 minutes, or until lightly brown.  Split, butter and put egg/sausage/bacon/cheese in the center.  Cover top and hand out!  Note: should you have any leftover buttermilk utilize it instead of the milk to tastier snacks, but add t. baking soda.
  1. Bagels-Cover with cream cheese or include egg/sausage/bacon/cheese.
  1. Oatmeal-Boil 1-3/4 c. water and add 1 c. old fashioned oats.  Stir and let boil for approximately two minutes.  Cover, turn off the heat and allow it to sit for approximately 5 minutes.  Put into two bowls.  Add a little brown sugar or maple syrup, raisins, cinnamon, milk and nuts.  It is fantastic for you, satisfying, quick and very affordable.
  1. Cheese Sandwiches-Toast a bread and cut pieces of cheddar, mozzarella or anything and melt in oven or microwave for open face sandwich.  Super quick!
  1. PBJ-On hot toast that this one is difficult to beat.
  2. Leftovers-My children eat pizza, chicken nuggets, burgers or anything they can get their hands on for breakfast, particularly on the weekends.
  3. Eggs-Scrambled, roasted or boiled, they are quick and nutritious.  Cook on medium to medium heat and don't overcook.  Note: Occasionally I place eggs on toast for a speedy breakfast sandwich.
