We are fortunate to have a lot around here, In the spring I plan on tapping a few trees for sap. We'll see how that goes. I brew, so maybe I'll try to make some beer as well.

Im no expert. Carbonated birch sap may be called birch beer. Similar to root beer. I imagine it can be fermented to become alcoholic. That's why it would be called beer I guess.
