Why does yellow cakes provide people such a hard time? Its one of these cakes that if you find a great yellow cake recipe, you stay with it! YES you are able to have that classic buttery vanilla flavor of a homemade yellowish cake WITH simple ingredients. I'm sitting on the sofa watching Nutty Professor while I write that this blog post. Remember that part? Anyways, Ive been fortunate to encounter a few actually good yellowish cake recipes, but something in me just cannot seem to quit searching, kinda like using macaroni and cheese. Never satisfied even when you are satisfied.
Well today I would like to share the homemade yellowish cake recipe Ive been making for several years. Its classic, old classic yellowish cake recipe with simple pure ingredients. No butter flavored shortening or sour cream or yogurt. Wait, am I telling my age? I digress. This yellowish cake recipe bakes up super damp, fluffy and velvety soft with no eggy taste that actually irks me. My grandma sometimes adds in butter to take the buttery flavor over the border, but I never appear to have that stuff available so I don't add it in. F. Grease and flour two 9 inches cake pans.
Set aside.
In a giant bowl, cream together sugar and butter.
Add in egg yolk and vanilla, mixing until completely incorporated. Set aside.
In a separate bowl mix flour, leavening and salt.

Gradually add dry ingredients in moist ingredients, alternating with the buttermilk. Mix until batter is fluffy, but be cautious not to over mix. Beat egg whites until stiff and thick.

  • terribly gently fold egg whites into batter and blend simply till incorporated.
    Pour batter into ready pans and unfold into even layers.
    Bake for 30-35 minutes. Remove from oven and allow to cool in pans until pans are hot to the touch.
    Cautiously remove cakes from pan and place on a cooling rack to finish cooling. When cakes are completely chilled frost with chocolate butter cream frosting. Did This Yellow Cake Sink In the Middle? NOTE Hey men! Yellow cakes are famous for giving people a tough time and I was so sure that this one will be a breeze for everyone. Ok lets look into this. Ive tried to troubleshoot that this cake so often times to see what might be causing the sinking however it comes out fantastic for me each time. Go figure. In the mean time Ill also post my grandmothers yellowish cake recipe as well.
    What causes a yellowish cake to sink in the middle: 1.) BEAT EGG WHITES CORRECTLY AND GENTLY FOLD THEM IN THOROUGHLY. Ensure that your baking powder isn't expired. No seriously go check right now, you could be surprised. 3.) Dont open the oven whilst the cake it cooking.
