Since the infused oil does have a limited time before it will go bad even in the fridge, I would suggest you freeze it to avoid the oil from spoiling. By measuring out set units (i.e. fluid oz, grams) before freezing, it will save time when you want to use the oil for edibles.

Gummies are super easy to make and fairly easy to get dosing locked in. If the oil is too potent you can always use less of the infused oil on your next batch, and cut the overly potent gummies in half.
