1/6 eggplant peeled, cut into strips
2/6 prepare a pot of hot oil and fry the eggplant until soft
3/6Heat a pot of boiling water, add salt, blanch the eggplant, drain and set aside
4/6Heat oil in a skillet and add minced meat, onion, ginger and garlic. Stir well
5/6 into the broad bean sauce, soy sauce, water, then add eggplant strips, sugar, vinegar, water starch, stir fry evenly
6/6sprinkle chopped green onion, dish and serve
