One of my favorite desserts is the NO Bake version of Pineapple Cheese Cake. Apologies for a low-quality picture. It's easy to assemble. I guarantee you the taste of this dessert is heavenly and divine when served cold.
Ingredients
Digestive biscuits.10
unsalted butter 150 gms
Cream 150 ml
Cream cheese 300 gm
hung curd 250 gm
Pineapple jam
Gelatin 60 gm
Base of cake
Crush digestive biscuits till you have fine powder then.add melted butter and mix well. In a cake tin spread the mixture around and press well. Freeze for 15 mins.
Cake batter
Mix gelatin in hot water till it is dissolve completely and set aside to cool it down.
In a bowl mix in cream cheese + hung curd + cream + pineapple jam + dissolved gelatin
Remove the cake tin from freezer and put in the cake batter and keep in fridge chiller for at least 3 to 4 hrs.
Decorate it with pineapple pieces and cream. Bon Appétit!
