Upside Down Cheesecake

Juicy cheescake - lemon fresh and crunchy crumble on top.

Ingredients


6 petite suisses (or 200 gr thick cream of at least 40% fat)
300 gr fresh cheese
4 eggs
100 gr sugar
1 tee spoon vanilla extrat or the best of one lemon

50 gr butter
100 gr shortbread
3 soup spoons oats
1 soup spoon sugar
pinch of salt

  1. Preheat the oven 120 °C.
  2. Whisk the eggs with the sugar. Add lemon zest, cream and fresh cheese. Stir well.
  3. Put the mixture in a porcelain baking form(s), you will serve the cake in the same. Bake in the oven 45-50 minutes, till the middle of the cake is firm.
  4. Melt the butter without burning it. Mix it with the crushed shortbread, oats, sugar and salt. Still warm put the crumbles on the top of the cake and press them a little.
  5. Cool down for few hours.
