Juicy cheescake - lemon fresh and crunchy crumble on top.
Ingredients
6 petite suisses (or 200 gr thick cream of at least 40% fat)
300 gr fresh cheese
4 eggs
100 gr sugar
1 tee spoon vanilla extrat or the best of one lemon
50 gr butter
100 gr shortbread
3 soup spoons oats
1 soup spoon sugar
pinch of salt
- Preheat the oven 120 °C.
- Whisk the eggs with the sugar. Add lemon zest, cream and fresh cheese. Stir well.
- Put the mixture in a porcelain baking form(s), you will serve the cake in the same. Bake in the oven 45-50 minutes, till the middle of the cake is firm.
- Melt the butter without burning it. Mix it with the crushed shortbread, oats, sugar and salt. Still warm put the crumbles on the top of the cake and press them a little.
- Cool down for few hours.
