Hi guys. Tonight I made spinach and ricotta chicken for dinner. Ohh my its so amazing.
⚫200 g baby spinach
⚫1 cup low fat ricotta
⚫2 tbsp fresh parsley finely chopped
⚫4 small chicken breasts
⚫Olive oil spray
⚫Salt and pepper
I put the oven on 200C and line a tray with baking paper.
I placed my spinach in a bowl and covered with boiling water.
I allow it to sit for one minute before draining and put under cold water to stop the cooking process.
I squeezed out the excess water and finely chop the spinach.
I placed in a bowl with the ricotta and parsley and stir to combine. Seasoned the taste with salt and pepper.
I took each chicken breast and cut a deep pocket into the side. Stuffed with the mixture and secure with a toothpick.
I Heat a large frying pan over high heat and spray with olive oil.
I then cook the chicken for two minutes on each side, until golden.
I transfered to the baking tray and cook for 15 minutes or until cooked through.
I Served with steamed broccolini and roast potato.
