πΏπ Slow Cooker Basil Chicken Curry Recipe π²
You don't have to sit and monitor the cooktop for this recipe. Dinner is ready in a matter of hours if you simply put everything in the slow cooker, and it will also fill your house with a wonderful aroma.
π₯ Ingredients
1 tbsp. π§ ghee
2 1/2 lbs π bone-in, skin-on chicken thighs
2 (13.5 oz.) cans π₯₯ coconut milk
2 tbsp. πΏ dried basil leaves
1 tsp. π§ salt
1/2 tsp. β« pepper
2 tbsp. πΆοΈ Thai red curry paste
1 tbsp. π curry powder
1/2 tbsp. π garam masala
1/2 tsp. πΆοΈ chili powder
2 cloves π§ garlic, minced
2 tsp. π« fresh ginger, grated
1 π§
onion, chopped
2 πΆοΈ red bell peppers, chopped
2 tbsp. πΏ fresh cilantro, chopped
π Cooked rice (optional)
π« Naan bread (optional)
π Directions
Step 1:
In a large skillet over medium-high heat, add π§ ghee. Once hot, sear the π chicken thighs on each side until golden brown. Set aside.
Step 2:
In a slow cooker, add π₯₯ coconut milk, πΏ basil, π§ salt, β« pepper, πΆοΈ curry paste, π curry powder, π garam masala, πΆοΈ chili powder, π§ garlic, and π« ginger. Stir to combine, then add π thighs, π§
onion, and πΆοΈ bell peppers.
Step 3:
Cook on high for 4-5 hours or on low for 6-8 hours.
Step 4:
Remove π chicken thighs from the slow cooker and place on a cutting board or plate. Remove the skin and discard. Shred the chicken, discarding bones, then place it back into the slow cooker.
Step 5:
Serve curry over π rice with π« naan and top with πΏ fresh cilantro. Refrigerate leftovers.
