往往话费时间的味道才是最值得回味的美好滋味,在你匆忙的路上,如果可以停下里做一件自己喜欢的事情,那么久用心做。
做款甜品来满足一下无处安放的双手和随时需要练习肌肉的舌头和嘴吧,这个时候采购草莓,我还是走了几处地方才买到。接下里就跟我一起动手来做可爱的草莓造型杯子蛋糕吧!
steem的第一次分享,各位看官如果有什么不懂的地方欢迎给我留言。
1. 准备食材,食材按照称量重量严格配方,最后大概可以做出12-14个杯子蛋糕。

2. 找个大盆混合牛奶、色拉油、蛋黄液,搅拌均匀 ![IMG_5151.jpg]()
3. 加入过筛的低筋面粉和泡打粉混合物(一定要过筛)
![IMG_5153.jpg]()4. 混合成均匀的面糊 面糊做好,放一旁待用;
![IMG_5154.jpg]()将蛋清、白醋、细砂糖,打蛋器准备好❤️————————————————————-❤️
接下来打发蛋清,需要边打边分3次加入细砂糖打发
5. 先把白醋加入蛋清液中,白醋为了稳定蛋清分子,也中和酸碱度
![IMG_5156.jpg]()6. 打蛋器开始打发蛋清,高速打发(全程高速)
![IMG_5157.jpg]()7. 大概几秒出现大气泡,加入细砂糖的1/3
![IMG_5158.jpg]()8. 出现密集的小气泡时,第二次加入1/3的细砂糖
9. 打三次加入白砂糖的时候,蛋白已经有纹路了,把剩下的白砂糖倒进去
![IMG_5162.jpg]()10. 继续高速打发至干性发泡,打到提起蛋白有直挺的蛋白头
![IMG_5163.jpg]()蛋白霜完成,160度预先预热好烤箱❤️————————————————————-❤️
接下来混合面糊和蛋白霜
11. 先加入1/2的蛋白霜倒面糊中,利用翻版的首手法,翻版均匀,小力哦

![IMG_5168.jpg]()14. 准备蛋糕模具,铺好烘焙纸

![IMG_5171.jpg]()16. 160度中下层烤25分钟

ps:可以用牙签从蛋糕边缘插入测试蛋糕内部是否烤熟
蛋糕底已经很好吃了,放凉过程会有一点回缩正常的蛋糕底的味道已经很不错了,吃一口软绵绵的
难点:戚风的特点就在于它的柔软口感,而最多的失败案例就是蛋糕出炉之后的大幅回缩,配方中加入了白醋(或柠檬汁)来稳定蛋清,同时面粉中加入泡打粉也可以增加蛋糕的稳定性。
