辅料料酒15克红剁椒50克豆瓣酱30克豆豉15克葱段30克葱花20克姜片20克盐2克
剁椒鱼头的做法
鱼头 1个、料酒 15g、红剁椒 50g、豆瓣酱 30g、豆豉 15g
葱段 30g、葱花 20g、姜片 20g、盐 2g
用少许盐和料酒将芋头腌制5分钟
锅中打入红剁椒、豆瓣酱、豆豉炒香,盛入碗中备用
碗底铺上姜片和葱段,将鱼头盖上
将炒好的剁椒酱均匀铺在鱼头上
移入蒸锅,沸水煮8分钟
撒上葱花

烹饪技巧
1.剁椒鱼头最适合用胖头鱼的鱼头来制作,胖头鱼肉质鲜嫩无腥味,非常的香美。
2.蒸制鱼头时间不要太长,时间长了影响鱼头肉质的鲜美细嫩。
