This is how we make Fujian style spring-pancake at home. The filling might be different from others. My mom usually make what we already have in the fridge.

Very simple and easy to make, and it tastes delicious!! i usually have 5 of these for dinner. My mom usually eat last because she would feed everyone first
The best wrapper you can find in Hong Kong that I know is at Chun Yeung Street North Point, we can google "雙囍粉麵廠". Others, like the one you get in the supermarket is not comparable.
