猪肝怎么炒好吃,我来告诉你

都说猪肝是个好东西,不仅可以明目,解毒,还可以补血,今天就和大家一起分享一下今天晚上我们家吃的菜之一青椒炒猪肝,味道还是不错的。

用料
猪肝:200克
淀粉:2勺
料酒:2勺
生抽:1勺
盐:适量
糖:适量
姜:5片
蒜头:3瓣
青椒:四分之一个
红椒:四分之一个
洋葱:半个
干辣椒:2个
青蒜叶:1根
步骤一:

猪肝买来之后在水中泡半个小时

剪去白色筋,切成薄片(一定要薄一点)

将切好的猪肝放碗里,加一勺盐(平时炒菜的两倍量)、少许糖、2勺(小汤勺)料酒、2勺(小汤勺)淀粉、生姜3片、蒜头1瓣

用手捏一下,腌制15分钟

准备一锅水,烧开,水要多一点,完全没过猪肝

放入腌好的猪肝。只要等猪肝变粉色时(不要变全白,全白就老了)立刻捞出冲洗干净(焯水时间一定要短,放入猪肝翻炒一下就关火,不用等水开)

将焯好的猪肝沥干水分

准备半个洋葱。四分之一个青椒,四分之一个红椒,切小块

锅里放油,油温7成热时放洋葱炒出香味,接着放青椒红椒,煸炒至断生

倒入沥干水的猪肝,加一勺生抽,几滴老抽(几滴就行,倒多了会发黑),少许白糖,少许料酒,2个干辣椒,一根青蒜苗,翻炒均匀(翻炒动作要快,不然容易炒老),淋一点水淀粉,关火,装盘
