前两个月有事耽搁一直没到steemit签到,这两天无意间发现大家都在参加@abcallen举办的CN区美食大赛,而且已经到4了。o(╥﹏╥)o话不多说赶紧来参加比赛,秀秀我的厨艺。
我一直都跟朋友说自己只会做大菜,不会做小菜。其实事实真是这样的,例如红烧肉,红烧鸡,红烧鱼,剁椒鱼头,酸菜鱼,我做的超级好吃,有机会把步骤分享给大家。但炒素菜就不行了,经常吵过火不好吃。
今天跟大家分享的是柠檬鱼,柠檬鱼之前饭店吃过。在家里常做的是酸菜鱼,买包调料回来做很方便。但市面上卖的酸菜鱼调料普遍辣,胃不好又爱吃鱼咋办呢?于是就自己研究了柠檬鱼。
下面这份柠檬鱼是不是色香味俱全。
因为临时参加这个比赛,也没有太多的图片,这张图片是之前完成后拍手机上刷存在感的,o( ̄︶ ̄)o
准备食材:黑鱼,豆芽莴苣(这两者根据自己喜好,也可以放金针菇),柠檬,花椒,小米椒,香菜,生姜,
生粉,黄酒,酸菜
步骤一,先将鱼片成片状,洗净,然后装入容器中,用生粉腌制十到十五分钟,倒入少许料酒。
(鱼片状难度比较大,一般我会请卖鱼的直接帮忙片好)
步骤二,在锅中倒入少许油,烧至7分熟,放入生姜花椒翻炒两下。然后倒入酸菜待闻到酸味后倒水,将之前的片鱼剩下的鱼骨,鱼头倒入锅中煮,放入柠檬(3-4片薄片,也可以根据个人喜欢吃酸的程度进行放置)煮的时间可煮开就好,也可以多煮些时间,我一般喜欢煮开后在炖个7-8分钟,这样可以将鱼头里面的精华煮进汤里可以放少许盐。(因为我家不喜欢吃蔬之鲜,所以调味料除了醋,盐,就还有老抽)
步骤三,将豆芽莴苣等配菜放入,待煮熟后捞起。注意为什么要这么做,我的切身体验,如果不捞起直接放鱼片煮,会因为锅内食材太多导致鱼片煮碎。
步骤四,将腌制要的鱼片倒入锅中,煮开后2分钟就可以起锅了。
步骤五,将小米椒切片或者丝放入汤中(为什么没有放在汤里一起煮,因为这样就不会太辣),然后将汤倒入刚刚盛好的配料和鱼片上,然后再放少许香菜,就完成啦。
