The question of whether Coconut sugar is any good has always remained a question of the ages. Now I am not talking about solidified coconut sugar, but granular coconut sugar. I recently had purchased a bag of granular coconut sugar and boy is it different. First of all, the appearance of the sugar is very dark, with semi regular shapes. Some are thicker grains, while others are small and pointed. What I did also notice was that the sugar was easily breakable. It does not maintain the structure that typical cane sugar maintains. Nor does the sugar dissolve in the way that one would typically expect .
Flavor wise, it is pretty good, but it does have an overall coconut type flavor. This of course makes perfect sense. I am not sure when someone would want to use coconut sugar over regular cane sugar, but when you are sweetening orange juice, I can strongly recommend against coconut sugar, unless you want a disgusting appearing brownish beverage.
