This Costa Rican coffee is very special, not only is it Honey Processed - retaining more of the coffee cherry mucilage on the bean during processing to increase the sweetness. It's also from the coffee strain Geisha - a highly prized variety of coffee which has it's own sweetness, super smooth body and sparkling flavour.

Here we have the delicious beans I freshly roasted, we can learn a little more about this particular coffee.

Here we have a small dose in my preferred brewing method the Aeropress.

And then ground ready for brewing.

Infused with hot but not boiling water, I like to let the water infuse with the coffee a few moments to extract the flavour.

And then it's time to to take the plunge, with the Aeropress you create the brewing pressure by pushing down the plunger.

Giving a delicious cup of freshly roasted and then freshly brewed coffee.

Sweet and smooth, hints of Strawberry and tangerine with a syrupy body and vanilla nougat finish.
