Coffee | Process Post Harvest Semi Washed

Good evening Steemians

Tonight I will try to explain about the post-harvest coffee process of Semi Washed method as I have discussed briefly on my initial post about coffee.

The semi washed processing method is the most widely used in Gayo Arabica coffee post-harvesting process

This is due primarily to the easy process and high market demand for this type of coffee and the time of the process is much faster than the coffee processed by other methods.

In general the post-harvest process of semi washed is divided into two, namely:

  • Semiwashed Wet Hulling
  • Semiwashed Dry Hulling

Before discussing how the two processes differ, the important factor to be ensured is to depulping immediately after the coffee is harvested after first washing with running water.

Wet grain harvest from pulping machine into sack or transparent plastic, if possible separate 12 kilograms for each sack or plastic. Bind as hard as possible with rope.

After that do fermentation, save wet grain for 12 hours.

Due to the depulping process is often done in the afternoon, it automatically fermentation process done at night.

In the morning, remove the wet grain that has been fermented into the washbasin.

Before washing, rub the grain by hand until musilage/mucus apart from the grain.

After that, soak the grain for 30 minutes, remove the floating grain.

After 30 minutes do the washing a few times until the water washing becomes clear.

Drain the grain in the basket for 30 minutes before then transferred to the drying media.

In Semi Wash Wet Hulling the drying is done two stages.

The first stage is only done for 1 or 2 days until the moisture content of coffee beans reaches 35-30%.

The hulling process must be done at the Factory which has Wet Hulling machine.

Second stage of drying. After the process of hulling coffee beans that have been separated from the skin of grain dried in the sun until the water content reaches 14-13%.

In Semiwash Dry Hulling the drying of grain is done in one long stages more or less for 12-15 days

The hulling process of Semi Wash Dry Hulling is only done once at the end of drying using the Dry Huller machine.

To get perfect quality bean, first the coffee beans have to go through the sorting process to separate the rotten seeds, rupture due to hulling, abnormal size and the like.

Because of the longer drying process, it is only natural that the price of coffee beans from Semi Wash Dry Hulling process is more expensive than Semi Wash Wet Hulling.

April 2018 market price for Semi Wash Wet Hulling ranges from Rp 85.000-Rp 90.000.

While the price of Semi Wash Dry Hulling ranges from Rp95.000-Rp 100.000


Before roasting should be stored for a week or more in a glass jar, transparent plastic or sack to remove the aroma from sun burning and the aroma of the drying media.

Keep in mind, to get amazingly good coffee not only requires red cherry and good process. But cooperation and communication with the roaster is also very decisive. Tell your roaster clearly what level of maturity you like for your favorite coffee.

Both types of process are suitable to drink with all the methods of brewing that you know especially for espresso and coffee latte and cappucino.
