Your eyes only have the three types of cones, each with they spectrum of affinity. All colors are merely a mix of these affinities.
Other terms for reflective colors exist: copper, at least.
The pigment thing is easy: pigments are subtractive, leaving only the desired spectrum reflecting from a white light.

There's a theory (hypothesis?) that some people have two types of retinal cone for detecting red spectrum colours and they tend to have a deeper appreciation for colour because their additional cone type gets fired up by certain things...
