Ingredients
1 piece of purple eggplant complete with stalk
1 egg
1 spring onion, chopped
1/2 tablespoon oyster sauce (sy wear Matsuri)
To taste salt & pepper
Step
Burn the eggplant over the fire. If the fear of fire, on the grill / grill can.
Make sure it is burned until the skin turns black and peels off. This will give you a smoky smell and ease the exfoliation.
While waiting for the eggplant, shake it off with oyster sauce, spring onion, pepper and salt.
(Seasoning for omelet can be changed depending on your taste If you like it can be added garlic powder or powdered broth.
After the eggplant skin is blackened and peeling, remove and peel the skin. (Wait a bit cool). Flatten with a spoon on a plate (or other flat bed). The stalk is kept connected huh.
Put the eggplant into the egg whisk.
Heat (very) a little oil in Teflon, put the eggplant. When turning eggplant pour the rest of the egg. Cook until cooked.
Serve warmly
