Jerusalem Artichoke Flowers
Every year they are the very last plant to put out flowers. It is a nice little surprise each time the bright yellow sunflower-esque flowers open up after the first frosts. I originally planted just 3 little tubers, that have now grown into a fairly substantial mass that I have been unable to fully remove. Each time I harvest the tubers, I always miss a few little dots that end up growing again the next season.

The good part of the volunteer Jerusalem Artichokes is that they are on the outskirts of the garden, along the fence line, so I am not ruining crop real estate. The potential for me to grow these for sale is on the low end, but that is not to say I couldn't figure out a place to plant or a market to sell to.
We will see, I have been wanting to plant a few rows of these to let them try and grow wild near our stream to act as a screen from the highway during the summer. They would make a great screening wall if planted a few rows deep, plus they are edible. Dual purpose food is always a great thing to have around. The stalks probably have a use as well that I am not taking advantage of currently.

Saddens me when the season changes sometimes.
Don't get me wrong, I LOVE autumn! But when the garden and flowers start dying off, I get a little sad.

Thanks. Yeah I am always a bit remorseful when it hits fall, but then I realize the temps are amazing and that tempers my feeling of loss for the lush growing plants.

I'm a fan of the sunchoke. I grow a big patch of them too. I usually dig em up in the spring, eat a bunch, get bad farts and also freeze and dry some too for later use. I feed lots of them to my rabbits too. They love them. They do make delicious soups. I usually make a bacon, potato, sunchoke mix soup. I've also made sunchoke chips which are not bad. How do you prepare them?

Generally we use them like and with potatoes. We have yet to have a large enough batch of them to do more than that, yet. I am still trying to decide where I want to plant larger numbers to let them take over.

yes they are best to have in a confined area where they can't get too out of control. Keep them away from any usable gardening space. They are actually not too difficult to eradicate from small areas if needed at some point in the future. Just keep pulling the shoots as they come up in the spring
