For my ColorChallenge #mondayred entry I would like to share with you a cake/dessert I made earlier this year ass it is topped with beautiful red summer berries.
January 2019 my workplace celebrated it's 10 year anniversary! We started out as a small after-school care service with 1 staff member and 4 children attending. Now we average 70-80 children per day with a maximum capacity of up to 100 and enough staff to cover the legal requirement of needing 1 staff member on shift per every 10 children in attendance (plus a few extra to ensure shifts can be covered if someone can't make it). And our original single staff member has stayed with the school this whole time and is now the Director of OSHC Services.
Morale leading up to the anniversary was low as there had been some system issues (but when aren't there any), our plans to renovate the facilities had been suspended until further notice and our oven broke, so it looked like we couldn't even bake a cake to celebrate.
A few days prior to the date I luckily remembered a cake my sister-in-law's sister had brought that didn't require cooking. So I offered to make this as a consolation so we could at least have something to celebrate.
I call it a "Cheats Cake" because there's no mixture to create, no cooking of any sort, it's a simple construction of chocolate biscuits sandwiched together with whipped cream and stood on their sides packed into a tray or container and topped with more cream and fruit or whatever else you want to decorate with. Leave it in the fridge overnight and the next day the cream has softened all of the biscuits and now has a cake-like texture.
If you want staunch it up a bit and don't intend on serving it to children you can sprinkle a bit of booze over the biscuits first (it also helps to give a more moist texture - I found the booze-less version I made to be a bit stodgy)
