Foodie in the Kitchen Series #17 - Easy Meatballs

I love meatballs!!! Who doesn't? And there is nothing like freshly made meatballs, however the task of chopping and rolling those individual balls can be so tedious. Well I found an easy no chopping or pan-frying method and they cook rather quickly. You can go from stove to table in 45 minutes or less. I placed these little guys under a broiler and not only was this process faster, but wasn't as messy to cleanup.

Ingredients


6 cups of your favorite tomato sauce
1/2 cup of dry bread crumbs
1/4 cup milk
1 large egg
2 teaspoon olive oil
2 teasooon Italian herb season (1)
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1 pound ground beef
1 pound veal(2)
1 1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/3 cup of finely grated Parmigiano-Reggiano cheese (3)

(1) Substitute: 1/2 tsp dried parsley, 1/2 tsp dried basil, 1/4 tsp dried oregano, 1/4 tsp dried thyme
(2) Substitute: Any ground pork, turkey or Italian sausage
(3) Substitute: I used freshly grated Parmesan cheese

Directions


  1. Pour your favorite tomato sauce in a large pot that will be able accommodate the meatballs, and bring to a slow simmer over medium heat. Reduce heat to low to keep sauce warm while you prep the meatballs.

  2. Preheat oven's broiler and set over racks 6 inches from heat source. Line baking sheet with aluminum foil and brush lightly with oil.

  3. Whisk bread crumbs, milk, egg, Italian seasoning, olive oil, garlic powder, and the red pepper flakes in a smaller bowl to form a thick slurry. Set aside till later

  4. Bring together the beef and veal or whatever your secondary meat of choice is into a bowl. Season with black pepper, salt, and sprinkle with Parmigiano-Reggiano cheese. Pour in slurry and mix until uniformed.

  5. Use a small portion scooper to form meat mixture into about 48 meatballs, you might have less of you make your balls bigger. Place on the baking sheet that you've prepared.

  6. Bake meatballs under preheated broiler until browned, 4 to 5 minutes. Turn meatballs and broil until browned on both side and they are no longer pink in center, 3 to 5 additional minutes.

  7. Transfer meatballs to pot with sauce. Increase heat to medium and cook for 5 to 10 minutes, or longer if desired.
