American pancake recipe
Ingredients
2 eggs L
50 g unsalted butter
250 ml milk
50 g white sugar
200 g of wheat flour
1 teaspoon baking powder
1 or 2 teaspoons vanilla (in my case two or three or more haha that the vanilla does not lack)
A little butter for the pan.
Preparation
Separate whites and yolks. Beat the yolks together with the sugar until they are fluffy and whitish and add the vanilla. The egg whites are reserved for later.
Add the melted butter to microwave and then milk.
In a bowl, mix the flour with the yeast and add to the mixture by squeezing well.
Beat the egg whites to the point of snow and when they are firm, incorporate them into the mixture with soft and enveloping movements. If you want to add chocolate chips, nuts or whatever you want, this is the time. At the end of the whole process.
Take a little butter and spoon it a little in the pan to grease it. When it is very hot, pour the dough into the pan, letting it drop to be round. Pancakes do not take much time to make. In just a few minutes, back and forth, you already have them ready. Let it be done for a couple of minutes, turn it with the spatula and the same. Time depends on the strength of the fire. It's a matter of catching the trick. They will be ready when you see them golden, even a little more than they appear in the photograph.
Tricks and tips
I use a small pan, about 15 centimeters in diameter, but you can use a bigger pan perfectly, even an electric iron, where you can also make more pancakes at the same time.
The pancakes can be accompanied by honey, cream, fruits, syrups, eat them alone ... But also, to the same mass, you can add chocolate chips with milk or white, because although they are very good alone, they are SPECTACULAR. I love them with bits of white chocolate inside, accompanied by strawberries.
