A common dish that includes rice, chicken, vegetables, and flavour is chicken fried rice. Cooked rice, chopped chicken, scrambled eggs, vegetables including carrots, peas, and onions, and soy sauce or other seasonings are often stir-fried together to make it.
Ingredients:
2 cups cooked white rice, preferably chilled
2 tablespoons vegetable oil
2 cloves garlic, minced
1 small onion, diced
1/2 cup frozen peas and carrots
2 eggs, lightly beaten
1/2 pound boneless chicken, skinless chicken breasts, diced
1/4 cup soy sauce
Salt and pepper, to taste
Optional: sliced green onions, sesame seeds, or chopped cilantro for garnish
Instructions:
In a sizable skillet or wok set over medium-high heat, warm 1 tablespoon of the vegetable oil. Sauté the garlic and onion for two to three minutes, or until fragrant and tender.
For around two to three minutes, add the frozen peas and carrots and sauté until heated through.
Push the vegetables to the side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they're cooked through, then mix them in with the vegetables.
Remove the egg and vegetable mixture from the skillet and set it aside.
Add the remaining tablespoon of vegetable oil to the skillet and add the chicken. Cook until the chicken is browned and cooked through, about 5-6 minutes.
Add the chilled rice to the skillet and stir to combine with the chicken. Cook for 3-4 minutes, stirring occasionally, until the rice is heated through.
Add the soy sauce to the skillet and stir to combine with the rice and chicken. Season with salt and pepper to taste.
Add the egg and vegetable mixture back to the skillet and stir to combine with the rice and chicken.
Serve the chicken fried rice hot, garnished with sliced green onions, sesame seeds, or chopped cilantro if desired. Enjoy!
