Celery soup with fried vegetables

  • 8 stalks of celery;
  • ½ fennel bulb;
  • 3 potatoes;
  • 700 ml of meat or vegetable broth;
  • 2 cloves of garlic;
  • salt and pepper - to taste;
  • 3 tablespoons of olive oil;
  • 120 ml cream;
  • 2 teaspoons of lemon juice;
  • 1 pinch of celery, caraway seeds or dill seeds;
  • greens for decoration.

Cooking



Cut the stalks of celery and fennel into pieces of 2-3 cm, potatoes - 3-4 cm. Chop greens.

Boil the potatoes in the broth until tender, about 10-12 minutes. Cool.

Put celery, fennel and whole cloves of garlic in a baking dish. Salt, pepper and mix with butter. For 40–45 minutes, bake in the oven at a temperature of 175–180 ° С. Stir occasionally.

When the vegetables are ready, add them to the potato broth. Stir and cool a little, enough 7-10 minutes.

Beat in a blender. Then bring to a boil again. Add cream and lemon juice, mix.

Sprinkle with celery seeds to make the soup even more flavorful. Serve with greens.
