Steps:
- Clean the chicken using hot water, vinger and limes.
2 . Season the chicken using minced onions, garlic, tomatoes and peppers with a sprinkle of salt, oregano, curry and black pepper.
3 . Pack the chicken in a ziplock bag and let it marinate over night or place it in a bowl of medium to hot water and place a heavy object on top to weigh the bag down to flash marinate for 15 to 20 minutes, 30 if you have more time.
4 . Get a pan and place a cap full of oil and let it heat up. Then add the curry with a bit of minced onions and leave it alone for 5 minutes.
5 . After the pan is well heated place the chicken in and let it brown for 5 minutes on each side. After flipping each side cover the pan and let it go on medium heat for 10 Minutes.
6 .While the chicken is cooking start on the rice by first washing it a total of 2 times and letting it soak while you add saffron, onions, garlic, salt, pepper and oregano in a separate pot for it.
7 . Check on the chicken now and add half a cup of water and a teaspoon of salt then cover and leave to boil.
8 . Now add your rice in the pot with the soaking water and stire it. Then cover and leave it and the chicken to cook for 20 minutes.
9 . After 20 minutes check on the rice and begin adding you mixed veggie. Add some carrots to the chicken when its nearly done and let them cook for an additonal 5 minutes.
