Simple but amazing lasagna recipe

Here my secret, super easy lasagna recipe.. This lasagna always impresses and feeds a large number of people. This recipe can be made a day in advance and the left overs are almost better than the first time around

Ingredients
-4 cups shredded Mozzarella cheese- fresh is best but pre-shredded works fine as well. –
-2 cups Parmesan cheese
-24 ounces Cottage cheese – you can also use ricotta if you prefer a more traditional lasagna
-1 pound ground beef
-14.5 ounce can diced tomato
-14.5 ounce can tomato sauce
-6 ounce can tomato paste
-Garlic
-Italian seasoning
-Salt
-Box of lasagna noodles

Directions

The sauce
-Brown ground beef in pot or dutch oven
-Meanwhile chop 4 cloves of garlic (more or less is fine base on preference)
-Add cans of tomato sauce, diced tomatoes and tomato paste in with the browned meat
-Add 4 cloves of chopped garlic, and 2Tbs Italian seasoning and a pinch of salt to sauce (more or less to taste).
Layering the lasagna
-In a 9x13 pan add ½ meat sauce, spread around.
-Add a layer of uncooked noodles, sometimes you will have to break some to fit the pan.
-Add another ½ cup sauce, spread around.
-Next layer ½ cup cottage cheese, mozzarella and ¼ cup parmesan.
-Repeat these layers until out of ingredients. I usually get 3 layers out of this recipe.
-Next pour 1 cup water over the lasagna (this will cook the noodles while in the oven), cover with foil and cook at 450 F for 45 minutes.
-Remove foil and cook for an additional 10-15 min.
-Let sit for 20 minutes before serving so that the lasagna is easier to cut.

Enjoy! #food

Having actually had this version of lasagna I can attest to how delicious it is. The cottage cheese instead of ricotta actually makes it a better fit for the 'american palette' IMHO. Leftovers the next day are even better!
