Blueberry Cobbler - Adapted Recipe - 13 August 2024

Yesterday I felt like having a sweet treat so after checking what I had lying around in the cupboards I went for the easiest recipe I could think of : I made a cobbler and used some blueberries.

The photo below shows you most of the ingredients I used:

I didn't have a lot of self-raising flour for the recipe so I used half a cup of that and half a cup of plain flour. I added about half a teaspoon of cinnamon powder so it wasn't so plain.

I felt that adding a whole cup of sugar to these already sweet blueberries was too much so I went for half a cup of sugar instead.

Also I decided to add an egg to the recipe because I'd seen a recipe that uses eggs. I whisked the egg lightly to break up the yoke and mix it with the white before adding the milk and a teaspoon of vanilla extract.

I was so concentrated on mixing everything properly that I forgot to take more photos of the steps.

This is a simple recipe because you are basically making a batter that you put on top of the fruit.

In less than 30 minutes the blueberry cobbler was ready.

I had a portion of mine with some plain yoghurt.

It's interesting how you can find a recipe and make it yours by adapting it so much.
