Ingredients for 4 people :
Salmon steak ( 400 grams), 3 avocados, 1 mango, sesame seeds, chives, mint, basil, lime, lemon, a brick of thick culinary cream.
Marinate a raw Scottish salmon steak in a mixture of finely chopped olive oil, lemon, chives, mint and basil.
Marinate for about one hour.
Meanwhile, dice the food and avocados, mix with a few sesame seeds.
Make the cream: take thick cooking cream ( more or less 30% fat). Whisk it up to a kind of creamy foam. Grind some lime zest or yuzu lemon. Finely chop the mint, basil and chives. Mix everything with the cream, dose according to your taste.
Then, on the plate, place the mango in a circle underneath with a cookie cutter, then the avocados and finally the salmon. Make a quenelle of cream on top and sprinkle with chives or alfalfa sprouts.
