Meatless Hamburger my Toddler loved it!

In general my toddler eats everything, really not a difficult eater at all but today -once at the dining table- she wasn't in the mood for soup. There is nothing worse than a hungry toddler. Well, a tired and hungry toddler is maybe worse...

Recently I saw a recipe for meatless burgers based on beans. This in combination with a fresh green leaf salad and tomato, avocado should gave her the energy she needs for the remainder of the day. The recipe is a very quick fix, prep and cooking took me about 15-20 minutes.

Needed:

  • Beans, can 400 gr;
  • 1 Large onion;
  • 1 garlic clove
  • Herbs - I used fresh thyme and rosemary a tea spoon full of each;
  • 1 Mozzarella cheese;
  • 1 Egg
  1. Chop the onion and garlic (I cut them quite finely, for obvious reasons);
  2. Fry the onion for 2 to 3 minutes on medium heat with a bit of olive oil , add the garlic and fry for another minute or so;
  3. In the mean time clean the canned beans and crush them with the back of a fork in a large bowl, add the shredded mozzarella, the chopped herbs and a bit of salt;
  4. When the onions are ready, add these also to the bowl.
  5. Add the egg, and mix everything well together;
  6. Preheat a frying pan on medium heat, add some olive oil to the pan;
  7. Create small hamburgers from the mix and fry them on both sides in about 5-7 minutes or when they get a nice dark brown color and the skin looks a bit crispy;
