Monday night, I made a super easy enchilada bake with quinoa and without the tortilla. This healthy and hearty bake was truly enjoyable and with a lot of goodies. I bet the leftover is going to taste even better.
It was easy to prepare - I skipped any rolling or wrapping of any kind and simply throw everything into a mixing bowl. My dinner was done in 30 minutes. Now, I have all the time to enjoy a quiet evening!
- Cook quinoa and set aside
- Preheat oven to 375 and coat baking dish with oil
- Combine quinoa, enchilada sauce, green pepper and chili, corn, black beans, parsley, cheddar and mozzarella cheese, cumin, chili powder, salt and pepper
- Pour mixture into the prepared baking dish and top with more cheese
- Bake in oven for 20 minutes
- Garnish with fresh tomato and avocado and dig in!
