Monday night, I made a super easy enchilada bake with quinoa and without the tortilla. This healthy and hearty bake was truly enjoyable and with a lot of goodies. I bet the leftover is going to taste even better.

It was easy to prepare - I skipped any rolling or wrapping of any kind and simply throw everything into a mixing bowl. My dinner was done in 30 minutes. Now, I have all the time to enjoy a quiet evening!

  1. Cook quinoa and set aside
  2. Preheat oven to 375 and coat baking dish with oil
  3. Combine quinoa, enchilada sauce, green pepper and chili, corn, black beans, parsley, cheddar and mozzarella cheese, cumin, chili powder, salt and pepper
  4. Pour mixture into the prepared baking dish and top with more cheese
  5. Bake in oven for 20 minutes
  6. Garnish with fresh tomato and avocado and dig in!
