Hi!
I am going to share with you a recipe for a lentil and bean vegetarian shepherdess pie.
Very good for you, very tasty and pretty easy to make.
INGREDIENTS:
1 large red onion
1 stick celery
2 small carrots
3 cloves garlic
handful of thyme
5 sun-dried tomatoes
Tablespoon of balsamic vinegar
vegetable stock
400g chestnut mushrooms
400g lentils
400g mixed beans
handful of parsley
4 sweet potatoes
4 white potatoes
1 slice of wholemeal bread
Butter
cheddar cheese
1 handful rosemary leaves
salt
pepper
METHOD:
Heat your oven to around 200. Chop the sweet and white potatoes into smallish chunks and add to a baking tray with olive oil, salt and pepper. Pop in the oven! This will need around 45 mins in the oven.
Chop the onion, celery and carrots and add to a large pan with some oil. Sweat this down for a few minutes before adding the garlic (either chopped or crushed).
Chop the sun-dried tomatoes into small chunks. Add into the pan along with the thyme and balsamic vinegar.
Chop the mushrooms and add to the pan with around 150ml of vegetable stock, the lentils and beans and the parsley. Keep stirring. Season with salt and pepper. This should be smelling amazing now!
- Take the slice of bread and either whizz it up in a blender, or do it the old-fashioned way by hand! Pop into a bowl with the rosemary and some salt and pepper to taste.
- When the potatoes are soft add them to a pan. Add a large tablespoon of butter and some grated cheese (to taste - so lots if you are like me!) Give it a good mash!
Add in the breadcrumb mix and combine.
When the lentil and bean mix is cooked add to a casserole dish.
- Add the potatoes to the top. Use a fork to make ridges in the potato mash.
Oven bake at 180 for around ten minutes. Then grill for five minutes.
