Cook with Us # 3: Dessert - Butterscotch Fruit Cocktail Sponge

Butterscotch Fruit Cocktail Sponge has a super light sponge cake texture with fruit cocktail hidden in the sponge. The piece de resistance is the rich butterscotch & coconut sauce that's poured over the sponge as soon as it comes out of the oven.
Really delicious as the sponge is soaked in this rich butterscotch sauce and tastes kind of tropical with the added coconut.
This dessert is served lukewarm; on its own, with custard, vanilla ice cream or cream and garnished with any seasonal fruit.
We currently have the most divine pomegranates and passion fruit -we call it granadilla- at the moment, so I used cream and both these fruits in the final plating; I must confess it was hard to make a choice!

This dessert is similar in texture to a typical South African dessert called Malva Pudding - Malva meaning Marshmallow

The ingredients required for this easy but super delicious dessert:

Sponge:
Sift together:
250ml (1 cup) Self-Raising Cake Wheat Flour
5ml Baking Soda
Pinch of Salt
Add & mix: 200ml Sugar

Lastly add & mix 410g can Fruit Cocktail plus the syrup & 2 beaten Eggs.

Spoon into buttered individual ramekins (makes 10).

Bake at 170 C in fan oven or 180 C in regular oven for about 20 min or till cooked through - test with skewer.

Make the sauce while sponge is baking.
Place 125ml Sugar & 125g Butter in deep pot over medium heat, stir till it becomes a rich butterscotch.

Add 250ml Milk & 1/4 cup Coconut and stir till butterscotch has melted.

Spoon sauce over hot sponges as soon as it's removed from oven.

Can be served plain with cream.

Fruit mostly sits in the base of the sponge.

Garnish with cream & seasonal fruit.

In my younger days guys used to joke and say, a woman's place is barefoot and pregnant in the kitchen, but this cook is way past her sell-by date so no chance of that ;);)

Note: I'm often asked to take this dessert to parties so double up the ingredients and bake it in a large pan, yields 24 servings then. Very popular warm pudding!

This looks like a scrumptious dessert. Could you use other fresh fruit in place of the fruit cocktail? Like fresh berries?

It would work but you would have to add some liquid to make up for the syrup from the canned fruit. Please let me know how it turns out @cecicastor :)

Ah I remember having a similar dessert somewhere - and my daughter and I love malva pudding. Well done with your post - very well executed @lizelle - loving your recipes

AH thank you @pandamama, glad you know Malva Pudding! This one is very similar but more delicious with the added fruit and the butterscotch & coconut sauce. I often double this up and bake it in a large pan if I need to take dessert to a party.

I see your recipe produced at least 9 ramekins. Wish I could have one as your dessert looks and sounds delicious. The butterscotch and coconut does make the dessert different and special! Is it typically served warm or room temperature? I feel I'd like to make it someday soon.

Hey @offoodandart, it's preferably served lukewarm, will edit my post, thanks for asking, it's quite important! I actually ran out of ramekins, so used a bigger one at the end, would easily make 10 regular size ramekins. It's a real yummy dessert, I've made it for parties by doubling up and baking it in a large pan and cut into squares, it's very popular.

Thank you @therneau, it's real easy and super delicious. Hid them from papa Bear but then he had a sugar low...I'm sure he injected too much insulin on purpose so he could have pudding :):)

Reading the description of your dessert is making my mouth salivate. I can almost taste it! I love sponge cakes, even better that it is soaked with butterscotch coconut sauce and who doesn't like fruit cocktail? Thanks for sharing.

I haven't been a huge fan of sponge cake over the years, but by the looks of it, the sponge turns out a little different, at least on top. Must be due to the fruit cocktail. It reminds me a lot of what pineapple upside down cake looks like with a glazed top. By the time it's all adorned on top, it looks amazing. Any samples left over? :)
