Not sure about the content of non-copper pennies, but a really quick way of doing the same in the UK with 1p and 2p coins is to simply use a strong magnet stuck onto the bottom of a magnetic steel tray or piece of metal. Spread out all of the coins onto the tray and everything that doesn't stick is copper.
