After finishing the front of the fox coaster I had to decide on how to finish the messy back. One option I could take was to crochet a plain green colour circle and then crochet both together or even sew them together. I took a different option : making a reverse circle.
I started by crocheting one row without any increases. Then I started to decrease following the same pattern of increases I’d followed to make a circle grow in size but in reverse. Thus after that plain row I crocheted three (UK) trebles then crocheted two together. This meant that I started to reduce the number of trebles and size of the circle. The next row I crocheted 2 (UK) trebles, then crocheted two together.
The above 5 year-old tutorial is very brief but it clearly shows you how to crochet two trebles together.
Before the opening became too closed in I decided to embroider the eyes and nose using black thread and a finer needle to keep the features small. In this way the thread ends could be well hidden too.

I continued in this fashion until I went back to just crocheting the plain row of trebles. I did find that reversing the process was faster for some reason.
Then using a craft needle I closed the little hole as neatly as possible :

I’m really happy how this coaster turned out, especially the 3-D effect of the ears and tail. I was also very happy that although the yarn wasn't fluffy at all in comparison to the original, I was able to use what I had available at home.
I can think of a number of variations in the same theme to make like a set of six coasters. @marito74 yesterday mentioned in her comment yesterday making cats too. It would be great to also make a two-colour dog that would look wonderful sleeping on a rug like this. I'll certainly be making some more soon.
