How much of these correlations are influenced by the available trading pairs on exchanges? For example VeChain seems to have high correllations with some coins and none with others. Is this because of the exchanges it's available on (and which other coins are on those exchanges)?

It's a good question — trading pairs almost certainly affect these correlations. A number of other factors probably do as well (e.g. which coins are accepted as initial payment for an ICO).
