Pernah dengar Lincah Busu (Rujak Busu)? Ini adalah kuliner yang sudah sangat dikenal di kalangan masyarakat Pidie, bahkan juga masyarakat dari luar Kabupaten Pidie. Jika belum pernah merasakan enaknya rujak ini, silahkan steemian berkunjung ke Pidie, Aceh, untuk menikmati sepiring Lincah Busu, rujak khas Aceh yang ada di Desa Bale Busu, Kecamatan Mutiara, Beureunuen.
Lincah adalah bahasa Aceh yang artinya rujak. Lincah yang ada di Busu ini memang sangat berbeda, rasanya nikmat membuat para tamu ketagihan. Yang unik dengan rujak ini adalah periuknya yang besar, beda dengan yang ada pada daerah atau tempat penjual rujak lainnya. Periuk besar tersebut dibuat dari Batang Pohon pegunungan yang sangat kuat, yang didatangkan langsung dari wilayah Tangse, Aceh. Ukurannya bervariasi dan biasanya periuk ini setahun sekali akan diganti. Rasa rujaknya yang enak ditambah dengan suasana pemandangan sawah-sawah dan aliran air sungai yang berada di samping tempat dijualnya Lincah Busu ini.
Aku bangga menjadi warga Busu, bangga dengan adanya rujak atau lincah Busu, yang bisa membangkitkan nama desaku. Ya, tubuhku lahir di Busu, besar di Busu, hidup di Busu, tidur kadang-kadang di kasur, kadang-kadang di lantai yang beralas tikar anyaman ibuku. Semenjak aku kecil, lincah Busu sudah ada, dan bertahan serta terus berkembang sampai sekarang. Sehingga Busu sudah terdengar seperti nama Kota yang ada di Negara-negara hebat.
Rujak Busu ini sama halnya seperti rujak Aceh pada umumnya. Dipenuhi dengan buah-buahan yang umumnya masih belum begitu masak sempurna, seperti bengkuang, pisang, ubi jalar, nenas, timun, pepaya, dan mangga. Potongan buah-buahan ini kemudian diulek sedemikian rupa dengan campuran gula jawa, sedikit kacang tanah yang telah digonseng, ditambah garam dan sedikit gula pasir, serta cabe rawit. Lalu diulek hingga merata di atas periuk besar yang terbuat dari kayu.
Rasa rujak Busu ini dapat disesuaikan, apakah kita ingin rasa yang pedas atau sedang-sedang saja. Namun, kebanyakan pengunjung ingin merasakan khasnya yang sedikit lebih pedas. Lincah Busu juga terasa lebih kelat, karena adanya potongan pisang muda yang dicampur dengan beberapa buah lokal dari Aceh, seperti buah rumbia (boh meuria). Rasa buah ini sedikit kelat dan beraroma khas. Dulunya buah ini mudah dijumpai yang mana banyak pedagang menjualnya bebas di pasaran, namun sekarang sudah sangat sulit kita temui. Kehadiran buah inilah yang memberikan sentuhan berbeda pada rujak Busu, Aceh, jika dibandingkan dengan rujak dari daerah lain. Segala kenikmatan dan lezatnya lincah Busu ini kita tidak perlu menghabiskan banyak uang, harga seporsinya hanya Rp. 5.000. Harga yang sangat murah bukan? Jika 1 SBD Harganya Rp. 50.000, maka akan kita dapatkan 10 porsi Lincah Busu.
Bagi kalian yang berkunjung ke Aceh sudah sepantasnya memasukkan rujak Lincah Busu yang sangat khas ini sebagai kuliner yang patut kalian coba. Di wilayah Kabupaten Pidie, rujak ini terdapat di tiga tempat. Lincah Busu yang terletak di Desa Bale Busu, Kecamatan Mutiara, Beureunuen, Kabupaten Pidie, Aceh, adalah tempat yang pertama dibuka oleh pemiliknya Mustafa (kami memanggilnya Apa Tafa). Ini adalah tempat yang sudah ada dari jaman aku kecil hingga sekarang.

Patokan tempatnya bisa kalian lihat di samping Lapangan yang ada tepat di depan Perguruan Tinggi Alhilal, Keuniree, Sigli. Selain di dua tempat itu, Lincah Busu di Wilayah Kabupaten Pidie juga terdapat di daerah Bambi, yang berada di pinggir jalan lintas Banda Aceh-Medan. Pemiliknya adalah adik kandung dari Apa Tafa yang bernama Basma, biasanya kami panggil Apa Ma. Nah, bagi kalian yang belum pernah mencoba kenikmatan rujak ini, kalian bisa menghubungi aku nanti saat kalian berkunjung ke Pidie.
